Combined with a quick garlic sauté and a drizzle of tahini sauce, this simple dish easily rivals any comfort food restaurant setup.

Loaded Baked Potatoes with TVP & Creamy Tahini Sauce
Description
You may have made loaded baked potatoes before but finding quick ways to boost the protein without sacrificing comfort can sometimes feel tricky. With this recipe, I've paired tender microwaved potatoes with savory, seasoned TVP and a creamy maple-tahini drizzle to create a nourishing, high-protein plant-based meal in no time!

Textured Vegetable Protein filling
Creamy Tahini Sauce
Instructions

Prepare TVP
Combine the TVP and hot vegetable stock to a bowl and cover with a plate for at least 10 minutes.

Microwave Potato
Wash potatoes and dry them using a paper towel. Rub the potatoes with olive oil and a pinch of salt and pepper. Pierce the potatoes 2-3 times with a fork on either side and microwave on high (800W) for 5 minutes. Then turn it over and cook it for another 3-5 minutes depending on the size of the potato.

Sauté Aromatics
Rinse the spring onions and dice them up finely, set aside the Green parts for garnishing the dish at the end. Finely mince the garlic cloves and add both to a wide pan with 2tbsp of heated olive oil over a medium high heat for 2-3 minutes.Â

Add Frozen vegetables
Add the Frozen vegetables with the paprika and cumin to the pan. Add a pinch of salt and pepper to taste and let this cook for 5-6 minutes. This should be stired frequently so the spices don't burn and the vegetables cook evenly.Â

Prepare Tahini Sauce
Combine Tahini, Vinegar, Maple Syrup and Nutritional Yeast in a bowl and whisk this together. Add 1tbsp of water to this and keep adding water until you have reached the desired consistency (This is shown in my youtube video).

Assemble
Slice each potato down the middle and open it up like a parcel, at this point you can add your TVP/Vegetable mixture and drizzle the Tahini sauce on it. The green parts of the spring onion can be used to Garnish this.Â

- Potato Prep: Pricking the potato skin with a fork allows steam to escape safely during microwaving. If you prefer a crispier skin, bake the potato at 200°C (400°F) for 45–50 minutes instead.
- Sauce Consistency: Tahini can thicken quickly when mixed with liquid. Add one tablespoon of water at a time until you reach a smooth, pourable consistency.
