Description

Upgrade your meal prep with this high-protein Lemon Chickpea Curry, featuring firm cubed tofu and nutrient-dense greens simmered in a silky, citrusy chickpea and nutritional yeast sauce.   1. Sauté Onion and carrots

    Finely dice the onion and carrots into small 1cm squares and add to a deep pan over medium heat with the olive oil. Stir this every 4-5 minutes and cook this with the lid on for 15 minutes. 

  1. Prepare Aromatics

    Finely dice the garlic into small pieces and add it to the pan alongside the spices and tomato paste. Cook this for a further 7 minutes, stirring every couple of minutes. 

  2. Add tofu and stock

    Dice the tofu up into small cubes (approx. 2x2cm) and add it to the pot, alongside the vegetable stock and simmer with the lid on over a low heat until the purée is done. 

  3. Prepare the Chickpea purée

    Add all of the ingredients for the chickpea purée to a blender and blend until all ingredients are combined and it is silky smooth. Then add it to the pot and simmer this with the lid off for 20 minutes to allow some of the liquid to reduce. 

  4. Cook rice (Optional)

    If serving with rice, wash and rince the rice. Add the rice and water to a pot and bring to a boil. As soon as it starts to boil reduce the heat down to low and simmer for 10 minutes until the water has been absorbed with the lid on throughout the cooking process. Set the rice aside until the rest of the recipe is complete with the lid on to allow the rice to steam. 

  5. Add leafy greens

    Towards the end of cooking, add your leafy greens and cook this for a further 3 minutes until they are cooked through. 

  6. Assemble

    Combine the rice with the chickpea curry and enjoy!
